In less than 5 minutes you can make this warm, antioxidant and iron rich snack!

INGREDIENTS:

  • 3 cups of kale
  • 3 cups of spinach
  • extra virgin olive oil, lemon juice, salt, pepper & garlic powder to taste

Pour some water into a medium sized pot and place a steamer basket into it. Make sure that the water is not high enough to touch the bottom of the steamer basket.

Add kale and spinach and cover on low for about 3-4 minutes. The key is to just lightly steam your vegetables:

Once the kale and spinach are lightly steamed, remove them from the basket and put them into a serving bowl:

Add a little lemon juice, extra virgin olive oil, salt, pepper and garlic powder to taste:

Mix it up and enjoy!

Embrace healthy fats with this quick snack idea!

INGREDIENTS:

  • 2 slices of bread (all natural, no preservatives, read more about bread here)
  • 1/2 of a large avocado
  • 1/2 of a large tomato
  • 1 teaspoon of extra virgin olive oil
  • salt, pepper & garlic powder to taste

Toast two slices of bread. Spread half of an avocado onto one of the slices:

Add tomato slices:

Drizzle extra virgin olive oil and the spices onto the tomato slices:

Enjoy!

Tip: To make your sandwich extra tasty and to aid digestion, when you add tomatoes and avocado to your sandwich, drizzle on some extra virgin olive oil and salt and pepper to taste. Also, you can spread hummus onto your bread for some extra flavor.

A great tip I learned from Courtney is to buy berries in bulk when they are in season and on sale and then freeze them! Here is a quick and delicious vegan berry smoothie recipe which makes two servings:

INGREDIENTS:

  • 2 cups of unsweetened rice milk
  • 1 cup of frozen berries
  • 2 ripe medium sized bananas
  • 1-1.5 cups of ice
  • 1 teaspoon of raw agave (for sweetness) if your bananas are not ripe

Optional: vegan protein powder

Add ice and rice milk:

Blend and enjoy!

I just got a juicer and I’m trying all kinds of combinations. What is your favorite juicing combination?

We just got a juicer this past weekend so I have been trying all kinds of different combinations, with one of my favorites being apples and carrots. Especially when you buy organic, you want to make sure you use as much of the fruit as possible so when we noticed all of the “pulp” in a side compartment of the juicer after juicing, we decided to use it to make a sweet bread, and this recipe was born!

Note: taste the apples and carrots you use for your juice because if the carrots are bitter or the apples are not that sweet, you may need to add a little more maple syrup to the recipe.

DRY INGREDIENTS: (for one large loaf)

  • 1.5 cups whole wheat flour
  • 1 cup chopped walnuts
  • 3 teaspoons baking powder
  • 3 teaspoons cinnamon
  • 2 tablespoons cornstarch
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger

WET INGREDIENTS:

  • 3 mashed ripe bananas
  • 1 cup carrot and apple pulp from the juicer (remove any seeds)
  • 1/2 cup olive oil
  • 3 tablespoons maple syrup
  • 2 tablespoons lemon juice
  • 2 tablespoons water

Preheat your oven to 350 degrees and then chop up the walnuts:

Mix all of the dry ingredients together in a bowl:

Mash up the ripe bananas with a fork:

Mix all of the wet ingredients together in a bowl:

Mix the dry and wet ingredients together gently and make sure that you don’t over stir them:

As soon as the ingredients are generally mixed, stop:

Grease a loaf pan with a little grapeseed oil. Note: if you want to make muffins instead of a loaf, use muffin/cupcake baking liners.

Pour the mix into the loaf pan (or cupcake baking liners) and do not flatten the top of the mixture, just pour it all in:

Place the loaf pan into the oven and bake it for 50-60 minutes:

You can check to see if the loaf is ready by pushing a toothpick or kabob stick into the loaf. If there is no residue on the stick when you remove it from the loaf, then it is ready! If there is residue on the stick, place the loaf back into the oven and repeat the test after 5-10 minutes.

When the loaf is ready, remove it from the oven and let it cool for 20 minutes:

Use a knife to cut around the border of the loaf to loosen it. Then turn the loaf pan upside down and gently place it onto a plate:

Slice it and enjoy!

Below is an example of what this recipe will look like as muffins:

Something hair product companies don’t want you to know is that shampoo is harmful for your hair. A strand of your hair has tiny scales on it that lay flat, however, when you use shampoo aka detergent on your hair, the scales are opened and that’s why your hair becomes rough, tangled and then in need of conditioner. The only reason you need to put conditioner on your hair therefore, is because shampoo damages your hair.

In addition, have you ever looked at the ingredients in shampoos and conditioners from every price point? They normally have a long paragraph of chemicals and preservatives that you would never want to lather onto your scalp. Thankfully, there’s a simple and extremely cheap alternative to using shampoo and conditioner - water, baking soda and jojoba oil! I first found out about mixing water and baking soda to clean hair from Sunshel and I experimented for a month with different amounts of baking soda. In place of conditioner, I decided to use jojoba oil on the tips of my hair as a leave in conditioner (I also use jojoba oil on my face as a moisturizer!).

INGREDIENTS FOR A SHAMPOO ALTERNATIVE:

  • 1-2.5 tablespoons of baking soda depending on your length of your hair and how oily it is
  • 1 cup of water

INGREDIENTS FOR A LEAVE-IN CONDITIONER ALTERNATIVE:

  • jojoba oil (you can also buy it at Trader Joes and Whole Foods)

It takes a little experimentation until you find the perfect amount of baking soda to use for your hair according to its length and how oily it is. So if you wash your hair using this method and your hair is still very oily, use a little more baking soda next time. 

I went to a local beauty supply store and bought a plastic container as seen below for under two dollars:

Measure the baking soda and add it into the plastic container:

Pour the water in and shake well before using. After you get your hair completely wet in the shower, pour the baking soda and water mix on your hair and scalp, massage it in, and leave it on for a few minutes. Then rinse it out, comb your hair and you’re done! I noticed drastic changes in how my hair looks dry when I used this method versus shampoo and conditioner. My hair was no longer frizzy, it felt softer and lay straighter.

When your hair is still damp, pour some jojoba oil in your hands and add it to the tips of your hair for some extra conditioning.
